The Basque have conserved their traditions and adapted them to local style of cooking. For example, they are using traditional Basque products and spices such as chorizo, pork, paprika, etc., but they also mix them with some local products.
Another example of success of Basque cuisine in United States you can find in Twin Falls, as Melissa Davlin said in her post «Eat like a Basque: Twin Falls couple shares recipes». In this town Marilyn Sarasquita and her husband Phil live. They have Basque origins and they know a lot about Basque cuisine. They help to a lot of Basque clubs from California and Idaho, which have achieved recognition of local population.
